Grilled Asiago Italian Chicken
We love Chicken Parmesan and I wanted to change things up a bit and make something a little different! My hubby makes the best meals on the grill and I knew this would be delicious! I decided to marinate the chicken in pizza sauce! I've never done it nor have I found recipes that do it! I'm sure those type recipes are out there but I haven't run across them! We love Chef Boyardee Pizza Sauce and I had a can just sitting there calling my name! I also had a container of fresh, shredded Asiago cheese and in my mind, dinner might as well been served because my mind was made up on what dinner was going to be!
Asiago cheese is my favorite cheese and I knew it was going to be a fantastic dinner! The pizza sauce flavor in the chicken was like it was built in, like I bought a pizza sauce flavored chicken breast! The flavor was inside and out! It was the most flavorful chicken that I've tasted! Along with the nutty flavor of the Asiago cheese, everything was perfect about this dinner! Great marinade! You won't be disappointed!
½ cup Zesty Italian Salad Dressing
1 (10 ounce) can Chef Boyardee Pizza Sauce, or your favorite pizza sauce, divided
1 teaspoon oregano
1 teaspoon Dry Italian salad dressing seasoning mix
3 boneless skinless chicken breast, butterfly cut thru to make 6 thinner breast
4 ounces shredded Asiago cheese
pasta of your choice, cooked to box directions and drained
butter, salt and pepper, mixed into drained pasta if desired
basil for garnish, if desired
Place salad dressing, ½ cup pizza sauce, oregano and dry Italian seasoning mix in a large Ziploc bag.
With a fork, poke holes all over chicken breasts and add to marinade bag. Seal bag and move and groove the marinade all over chicken. Place in fridge 6 hours.
Preheat grill to medium high heat.
Remove chicken from bag and discard marinade.
Grill 8-10 minutes on each side or until inside temp reaches 175°. During the last 3-4 minutes of grilling, baste each side of chicken with the remaining pizza sauce and top with cheese until melted.
Garnish with basil. Serve over cooked pasta.
