Santa Fe Chicken Packets
Another Hobo Dinner that is delicious! I sure wish we were campers! We'd be eating great with all the Hobo Dinners out there!
The black bean/corn/tomato mixture was the perfect topping for chicken! Tasted great! Everything came together nicely with the taco seasoned chicken! Easy to prepare and no standing over the hot grill!

dry taco seasoning mix for chicken, 1-2 tablespoons
1(15 ounce) can black beans, drained and rinsed
2 cups frozen whole kernel corn
1 (10 ounce) can Rotel Original Diced Tomatoes & Green Chilies, drained
1/2 teaspoon ground cumin, I used salt and pepper
Cooking Spray
2 boneless skinless chicken breasts, butterfly cut to make 4
1 cup shredded Mexican cheese blend, or more to taste
Butterfly cut thru chicken. Sprinkle taco seasoning mix on both sides. Let sit 30 minutes.
Stir together beans, corn, tomatoes and cumin in medium bowl.
Grill chicken on high heat, 4 minutes on each side, to get some color and grill marks. Remove from grill.
Spray (with Pam) 4 large sheets of heavy duty foil.
Lay chicken in middle of foil and then top with bean/corn/tomato mixture.
Fold foil leaving room on the top.
Place foil packets on grill and grill on medium/high heat 30 minutes with the grill lid closed. Check at 20 minutes to see if the chicken is done.
Release the steam from packets gently when opening.
Top with cheese and close foil until cheese melts.
Serve.
