Pizza Quesadilla
The crunch of the tortilla was awesome! That made it for me! Super easy to make and perfect if you are craving pizza too! I'm sure any pizza topping you like would go good inside of these!
Make sure to get your big spatula out to flip the quesadilla! I spread a light coat of sauce inside of the tortilla and it worked out great! I also had some on the side for dipping! The salami and pepperoni along with the sauce and cheeses made for a yummy dinner along with a side salad!

For 2 Quesadillas
1 cup meatless spaghetti sauce
2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese (4 ounces)
8 thin slices hard salami
12 slices pepperoni
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried oregano
In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. I used the microwave.
Meanwhile, spread butter over one side of each tortilla. I also melted some butter in the skillet.
I spread some sauce lightly on one side of the tortilla. Sprinkle unbuttered side of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. Top with remaining tortillas, buttered side up.
I had some melted butter in the skillet, maybe a teaspoon. Cook on a griddle or skillet over medium heat for 2-3 minutes on each side or until cheese is melted and tortilla is crispy if you like it crispy.
Cut into wedges. Serve with warmed spaghetti sauce.
