Cheesy Mexican Chicken
Delicious Dinner! We love a little spice in our life and this recipe fit the bill! The good thing about this recipe, you can spice it up or you can tone it down and customize the amount of spice you like in your food! We are crazy about Cayenne pepper and I use it in a lot of my recipes! Sometimes when I am sautéing onions, peppers or any veggies I will sprinkle some Cayenne in the skillet with the veggies and that is all it takes to spice up a dish! To me, Cayenne is a smooth spice! On the other hand, crushed red pepper flakes carry a more potent punch and should be used sparingly for our taste buds! The rub for this recipe is perfect!
The cheese sauce is perfect too! I like to buy a brick of cheese and shred my own because it is much tastier than the bag stuff! Don't over cook the cheese sauce as it might thicken up to much!
Pair this dish with some rice and you have the perfect meal!

4 boneless skinless chicken breasts
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
crushed red pepper flakes, to taste
½ teaspoon dried oregano
2 teaspoons paprika
1½ teaspoons ground cumin
salt, to taste
black pepper, to taste
CHEESE SAUCE
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 cup shredded extra sharp cheddar
¼ teaspoon paprika
1/8 teaspoon cayenne pepper, or more to your taste
¼ teaspoon salt
Mix together your seasonings and season both sides of the chicken breasts well.
Heat a grill pan over medium to high heat, and grill your chicken until done, 165° internal temp. Set aside.
In a medium sized sauce pot, melt your butter over medium heat. Whisk in flour and cook until it begins to just bubble around the edges. Add in the milk, slowly, whisking to combine as you go. Continue to whisk until your mix is heated through. You want it to be hot enough to melt the cheese, but not boiling. When the mix is hot, start whisking in your cheese in small amounts at a time until all of the cheese has been mixed in.
Once the cheese is melted, stir in your paprika and cayenne pepper. Season with salt if needed.
Serve cheese sauce drizzled over chicken.
