Cranberry Pecan Slaw
This was amazing! I didn't have any honey but thought that I did but went ahead and used Light Karo Syrup! I don't know if that's why I added 2 Tablespoons of sugar but either way it was Delicious!
I thought that the Honeycrisp Apple was the Star Of The Show! Yummy! This slaw had a perfect crunch to it and everything married well together! The pecans and dried cranberries along with the creamy dressing made for the perfect combination! Kroger brand Cole Slaw mix has a 16 ounce bag and I think Dole has a 14 ounce bag so look for your store brand first to try and find 16 ounces!
Recipe from A SOUTHERN SOUL
1 (16 ounce) bagged Cole Slaw mix
1 large Honeycrisp apple, diced
1 cup dried cranberries
1 cup chopped pecans
4 green onions, sliced
Dressing
3/4 cup mayonnaise
3/4 cup sour cream (yogurt can be substituted)
1/4 cup apple cider vinegar
2 tablespoons honey
Salt & pepper, to taste
2 Tablespoons sugar
Add slaw mix, apple, cranberries, pecans and onions to a large bowl. Toss to mix all ingredients. Set aside
In a small bowl, add mayonnaise, sour cream, vinegar, honey, salt, pepper and sugar. Whisk together until smooth.
Pour 3/4 of dressing over slaw and toss until mixed well. Add remaining dressing if desired. **Additional dressing can be saved in a sealed container to add to slaw at a later time or before serving.
Serve immediately.
Slaw can be stored, covered in the refrigerator until ready to serve. Toss slightly and add saved dressing if needed.
