Grilled Shrimp & Veggie SkewersIf you like shrimp and veggies you will like this recipe and what a great way to use up your garden veggies! The veggie possibilities are endless! Yummy! I was very new at taking food photo's at the time this picture was taken about 9 years ago (2009) 30 medium shrimp (cleaned and remove tails) Onion, Zucchini & Cherry Tomatoes, cut into chunks (or any vegetable you like) 1 packet True Lime (could use lime juice) Cracked black pepper & garlic salt to taste (or any spices you like) Extra Virgin Olive Oil for drizzle 2 Tablespoons parmesan cheese (in green container is what I used) Skewers Soak wooden skewers in water for 30 minutes. I use 2 skewers for each kabob. It is much easier to turn on the grill and holds everything in place better. Sprinkle cleaned shrimp with True Lime or lime juice and let marinate while preparing veggies. Coat chunked veggies with olive oil, cracked black pepper, garlic salt and parmesan chesse and toss with your hands is best. Mushrooms would also be good with this. Take 2 skewers and add shrimp, onion, tomato and zucchini, repeating until skewers is full. Repeat until everything is used. Grill until desired tenderness, turning several times.
