Beef Meximelt (Taco Bell Clone)We love Meximelts from Taco Bell and this recipe is pretty darn good! The taco meat with the 2 cheeses along with my tasty Pico de Gallo and sour cream on top of all of that made for one heck of a party for the taste buds! Very easy to throw together and a simple recipe to make! You'll have dinner ready in under 30 minutes! If you have some cooked chicken add some taco seasoning to that and these are delicious with chicken too! Anything you add to your tacos can be added to the Meximelts! Recipe adapted from INSPIRATION KITCHEN1ΒΌ pounds ground beef, browned, crumbled, drained 1 envelope taco seasoning mix 1 cup water 8 ounces Pepper Jack cheese, shredded 8 ounces cheddar cheese, shredded 4-6 Burrito size flour tortillas Pico de Gallo, LINK TO MY PICO de GALLO RECIPEsour cream, optional In a skillet brown and crumble ground beef. Drain. Return to skillet and add taco seasoning and 1 cup water. Simmer and stir occasionally until water is gone. In the tortilla, closest to you add cooked ground beef, Pepper Jack and cheddar cheese leaving a 1 inch gap on both sides. On top of cheeses add Pica de Gallo and sour cream. Make one roll of the tortilla and then fold in the sides and continue rolling until completely rolled up. On a microwave safe plate, microwave tortilla 40 seconds. Serve
