Tortilla Sloppy Joes
Good Sandwich! I was skeptical of the soup mix and thought that I had a disaster on my hands but NO it turned out good after cooking for awhile! When I first added the soup mix to the skillet and tasted it, it had a gritty texture to me! As it cooked, that went away! The soup mix added some really different things which I really liked! In the soup mix is a spicy blend of pinto and red beans, potatoes, onions, tomatoes, bell peppers, carrots and zesty seasonings! I don't think it made the Sloppy Joes spicy! Something about the beans in the soup mix, made for a delightful bite when you got a bite with beans! Yummy! I couldn't really detect any of the other ingredients from the soup mix except for carrots!
I served these on Brioche buns which to me are the best buns! So for a different Sloppy Joe this would be perfect!
Recipe from BEAR CREEK COUNTRY KITCHENS
cooking spray for skillet
1 ½ pounds ground beef, cooked and drained
1 Tablespoon extra virgin olive oil
1 onion, diced
1 Tablespoon minced garlic
½ cup tomato sauce
½ cup barbecue sauce
1 cup water
½ package Bear Creek Country Kitchens® Tortilla Soup Mix (I could only find at Walmart in the soup aisle)
6 burger buns, toasted (I used Brioche buns)
your favorite coleslaw
2 cups corn chips (Fritos) or crispy tortilla strips
Spray large skillet set over medium-high heat. Cook and crumble ground beef until browned and done, no pink. Remove from skillet and drain. Add olive oil to the same skillet adding onion and sauté 5 minutes or so. Add garlic to onion for 3 minutes.
Stir in tomato sauce, barbecue sauce, water and ½ package soup mix. Bring to boil. Reduce heat to medium-low. Cook for 12-15 minutes (adding more water if to thick) or until somewhat thickened and flavorful.
Get your coleslaw together.
Serve Sloppy Joe mixture on toasted buns with coleslaw and corn chips.
