Smoked Sausage & Cheesy Orzo
What a nice & creamy dish! My first time eating Orzo and I loved it! Looked kind of like rice but had the texture of pasta! The little shape of it was perfect for me! The combination of the broccoli and Orzo really made the flavor of the sausage pop! Putting a char on the sausage as it browns is the best way to cook it!
I was thinking that 1/3 cup of liquid which was milk wasn't going to be enough and it was going to be dry! NO, I was wrong! This dish was very creamy and dinner was perfect!
Recipe adapted from LOAVES AND DISHES
1½ cups bite sized broccoli florets, I buy right off of the salad bar at Kroger's
½ Cups uncooked Orzo
½ cup onion, diced
1 medium green bell pepper, diced
1 Tablespoon minced garlic
1 (14-16 ounce) package of Smoked Sausage, sliced into coins
2 Tablespoons peanut oil or olive oil
Salt and pepper to taste
1/3 cup milk
1 ½ cups shredded cheddar cheese
In a pot, bring 3 quarts of water to a boil and boil the cut broccoli florets for about 3-5 minutes. Remove broccoli with a slotted spoon onto a plate. In the same water boil the orzo according to box instructions. Drain.
Dice the onion and bell pepper. Cut the sausage into coins, about ¼ inch thick.
Heat a large skillet with oil on medium heat on the stove top. When the oil is hot, add the onion and bell pepper and sauté 5 minutes. Add the garlic and the sausage. When the sausage is browned, add the cooked orzo and the cooked broccoli to the skillet and lower the heat to medium low. Salt and pepper to taste. Add the milk and cheese. Mix well and simmer until cheese is melted.
