Pecan Pie MuffinsI love Pecan Pie with lots of whipped cream so when I found this recipe I decided to give it a try around the Christmas holidays! These little gems were delicious! I wanted to try one with whipped cream but I didn't have any on hand but I'm sure it would have been good! This wasn't your original Pecan Pie but for the muffin concept it was wonderful! Nice and nutty and super easy to make! The dusting of sugar on top was perfect! Recipe adapted from CALL ME PMC 1 cup light brown sugar ½ cup all purpose flour 1 cup chopped pecans 2/3 cup softened butter 2 whole eggs, beaten sugar for dusting, I used red since it was Christmas Preheat oven to 350° Line cupcake pan with cupcake liners or spray pan if not using liners. In a large bowl, stir together brown sugar, flour and pecans. Add softened butter and mix well. In a separate bowl beat eggs. Add eggs to dry mixture and stir until combined. Fill liners ½ full. Dust each lightly with sugar. Bake 20-25 minutes or until the toothpick test comes out clean from testing in the center of a muffin. Remove from oven and let cool or eat warm. Either way is delicious.
