Shepherd's Pie Loaded Baked Potato
I've never eaten or made Shepherd's Pie so I don't know how this baked potato compares but this baked potato was delicious! A baked potato topped with a "chili" mixture I will call it and loaded down with cheese! Half way thru my potato I decided to add some sour cream and it was out of this world good! If you like sour cream you need to add it to your potato and mix it up good with the meat mixture on your potato!
This is all you will need for dinner because it is very filling! I buy the huge baking potatoes at Kroger and they are a perfect meal! Delicious!
The original recipe comes from CUPCAKES AND KALE CHIPS
1 pound ground beef, browned & drained
2 extra large baking potatoes or if smaller this will make more than 2 potatoes
1 Tablespoon Extra Virgin Olive Oil
4 slices onion, diced
1 Tablespoon minced garlic
1 (6 ounce) can tomato paste
4 Tablespoons Worcestershire Sauce
1 (14 ounce) can beef broth
2 cups mixed veggies, thaw if frozen (I used frozen steam in a pouch and steamed before adding to skillet and the mix I used was corn, peas, carrots & green beans)
sea salt & cracked black pepper, to taste
1½ cups shredded cheddar cheese
sour cream for topping if desired
Brown and crumble ground beef. Drain.
Microwave each potato separate, 10 minutes each.
While you are cooking potatoes, add olive oil to skillet and sauté onions 4-5 minutes then add garlic and sauté another 2-3 minutes. Return beef to skillet and add tomato paste, Worcestershire, beef broth and veggies. Steam veggies first if you bought the steam in a bag veggies. Makes it a lot faster on getting done. Mix well and bring to a boil and then simmer until everything thickens up, 15-20 minutes. Season with salt & pepper.
Once potatoes are done, cut them down the middle and open up for toppings. Add the meat mixture and top with cheese.
Place on a foil lined baking tray and place under the broiler until cheese melts.
Top with sour cream if desired. I did this about half way thru my potato and it was wonderful.
