Turkey & Spinach Lasagna Roll Ups
These are super good, easy to make and good for you! We try to eat healthy when we can! I am 12 months into quitting smoking and I feel so much better so eating healthier is also on my list of things to do! I still love comfort food so balancing those dishes with healthy is something I can do! If I can quit smoking after 30 years I can do anything!
Really season these things up! They need it! I find whenever I eat whole grain pasta or ground turkey it needs seasoning! Italian seasoning mixture is good or oregano, basil, garlic, Dry Italian Salad Dressing Seasoning mix or just plain salt & pepper! Whatever you like but seasoning is the way to go with this recipe!

Makes 6 Roll Ups
½ pound ground turkey, cooked
6 Whole Grain lasagna noodles
1½ cups ricotta cheese
¼ cup grated parmesan cheese, from green container, plus a little more for topping
1 egg
2 Tablespoons Italian Seasoning
1/3 cup frozen spinach, thawed and water squeezed out
1½ cups shredded mozzarella cheese, or more to taste
24 ounces spaghetti sauce
Preheat oven to 350°
Brown turkey. Drain.
In a pot, boil noodles 4 minutes, just enough to soften them to separate and roll out. You don't want to cook them to long. Al dente is to long. Drain.
In a bowl mix ricotta, parmesan, egg, seasoning and drained spinach.
Roll out each cooked noodle and spread cheese mixture down the middle leaving space on the edges and ends. Top with turkey. Starting at one end, carefully roll noodle. Some mixture will try to come out of the edges but just push it back in.
In a sprayed or foil lined 8x11 baking dish, spread 1/3 cup or so of spaghetti sauce. Lay roll ups seam side down on sauce. Pour remaining sauce over roll ups. You may not use all of the sauce, it just depends on how saucy you like it. We like it saucy.
Sprinkle with parmesan cheese and mozzarella cheese. More cheese the better.
Bake 10-12 minutes covered. Uncover and bake 10 more minutes or until cheese is melted.
