Cheesy Hash Brown CasseroleThis recipe comes from my sister-in-law and it is one amazing dish! Very easy to throw together and pop in the oven! The perfect side dish for your meal and perfect for a crowd too! Hash browns are baked to perfection with bits of onion throughout with the creaminess from the sour cream and ooey, gooey cheese! Very filling to the tummy! I would say this compares to or even better than Cracker Barrel's Hash Brown Casserole! The entire 9x13 dish was wiped out by the family Easter gathering at my brother's house! Delicious! 1 (30 ounce) bag frozen hash browns, thawed 2 (10¾) cans cream of chicken soup 3/4 cups sour cream 1 small onion, diced, about ½ cup garlic powder, to taste onion powder, to taste salt and pepper, to taste 3 cups shredded cheddar cheese, divided Preheat oven to 400° In a large bowl stir everything together using only 2 cups of the cheese. Spray a 9x13 baking dish. Evenly spread mixture into baking dish. Sprinkle top with remaining 1 cup of cheese. Cover dish and bake 25 minutes. Uncover and bake 20 more minutes. Let sit 10 minutes before serving.
