Deviled Egg Pasta Salad
I've had this recipe saved for a long time! The weather has finally broke here in Cincinnati and we had a beautiful weekend! Time to begin grilling season and this recipe was the perfect side dish to our 1st grill out of the season! Along with our hot dogs and pizza burgers this was the star of the show!
If you like deviled eggs and pasta, this dish is for you! Combined they make for one tasty dish! The hard boiled eggs shine thru with the perfect taste of deviled eggs with the mayo, mustard, vinegar and relish! We love sweet relish in our egg salad so that's what I used in this recipe and it was fantastic! I'm sure dill would be delicious too! The pasta was a bonus! I could of probably eaten this without the pasta, that's how good it was! My family was very happy this dish graced our table!

8 ounces elbow macaroni, cooked & drained
1 cup mayonnaise
½ tablespoon yellow mustard
½ teaspoon white vinegar
Salt and pepper to taste
6 hard-boiled eggs, peeled and diced
1/3 cup sweet pickle (or dill)
Paprika for garnish
Cook pasta according to directions on box. Drain. Rinse in cold water and drain again.
In the same pot, boil eggs until hard boiled. Cool, peel and dice.
In a large bowl whisk together mayo, mustard, vinegar, and salt and pepper.
Fold pasta, eggs, and relish into the sauce. Taste and add more salt & pepper if needed. Sprinkle with paprika.
Cover and refrigerate until serving. Refrigerate overnight if needed and it's great the next day as well.
