Bacon and Blue Cheese Wedge Salad
This is one of the best salad's I've ever eaten because Blue Cheese is my favorite salad dressing! I've had the recipe for the Blue Cheese for a long time and I finally made it and boy am I ever glad I did! I got 2 compliments from my hubby and one was, "you can make blue cheese dressing" and the other, "if you could bottle this, you could become rich"! What a sweet guy he is! All the credit goes to my friend Deb for the Blue Cheese recipe! I think I'll make some more today! The way I described it to my mom was, "you could drink this stuff" and "it's like licking icing off of a spoon" Can you tell I am very impressed with this dressing?
If you like Blue Cheese Dressing you need to make this recipe! Great on your salads or with your wings and celery!
Serves 4
1 head iceberg lettuce, quartered
2 large tomatoes, chopped
4 scallions, chopped finely
6 slices freshly fried bacon, chopped
1/4 to 1/2 cup crumbled blue cheese
Place each wedge on a salad plate or in a bowl. Spoon dressing over the top.
Top each wedge with chopped tomatoes, scallions, bacon and crumbled blue cheese.
Homemade Blue Cheese Dressing
Recipe from my friend Deb
My Note: I used my blender to make this and I also bought Maytag Blue Cheese crumbles and it is delicious!
1½ cups real mayonnaise
1 cup sour cream
5 ounces blue cheese crumbles, save a little for garnish
2 teaspoons fresh lemon juice
2 Tablespoons dry minced onion
1 teaspoon garlic powder
salt and pepper to taste
milk to thin
Pour mayo, sour cream, blue cheese, and lemon juice into a blender. Blend to desired "chunkiness".
Stir in remaining ingredients. Add just enough milk to make it the thickness you prefer. It will thicken during chilling.
Chill.
