Shrimp Scampi OrzoI love orzo! It looks like rice but it's pasta! I love finding recipes that have orzo in them! Top it off with some shrimp....Yummy! I like the already cleaned, plump shrimp that is used for shrimp cocktail! Makes life easy when using that type of shrimp! I don't like wine so I replaced it with chicken broth! Worked great! Everything mixed together worked well together and it turned out to be an awesome dinner! Delicious and easy! Recipe adapted from ConservaMom 2 cups of orzo, cooked according to package instructions 2 tablespoons of olive oil 1 pound of large raw, deveined, tails off shrimp 5 tablespoons of butter 1 small shallot, finely diced 1 Tablespoon minced garlic Salt and pepper, to taste 1 Tablespoon lemon juice 1 cup of white wine, or chicken broth is what I used 2 Tablespoons basil 2 Tablespoons of grated parmesan cheese In a pot, cook orzo according to package instructions. Drain In a large pan heat olive oil over medium high heat. Add in shrimp, cook for 6-7 minutes, stirring occasionally. Add in butter, shallot, garlic, salt and pepper. Cook an additional 2-3 minutes, stirring occasionally. Add in lemon juice and wine or chicken broth. Cook an additional 2-3 minutes, stirring occasionally. Lower heat to medium low. Add in basil, parmesan, and cooked orzo. Gently fold all ingredients together. Allow orzo to become warm, then serve.
