Meatloaf Stuffed Peppers
By all means you can use your own meatloaf recipe for this! You can also make some stuffed peppers and some of it in loaf form all at the same time! It's a very versatile recipe! I came up with this recipe after we made Meatloaf Stuffed Peppers at work with leftover meatloaf! I call my meatloaf Awesome Sauce Meatloaf because the sauce is awesome! You won't use all of the sauce if you're just making stuffed peppers but I made some peppers and some in the form of a loaf so all was used up that way!
Delicious! My family loved the stuffed peppers but I'll say that I'm the only one who eats the whole pepper and my family just digs the meat out of the pepper but we all love the flavor that the pepper gives the meatloaf! They do the same thing with any type of stuffed pepper that I make!

1½ pounds ground beef
1 cup cracker crumbs
1 medium onion, diced
salt & pepper to taste
1 egg, beaten
3/4 cup ketchup
1/2 green pepper, diced
Mix well.
Awesome Sauce
1/2 cup milk
2 Tablespoons Worcestershire sauce
4 Tablespoons brown sugar
1/2 cup ketchup
1 (8 ounce) can tomato sauce
Mix well. Set aside.
4 large green bell peppers or colors of choice, this will make 8 pepper halves when cut
1½ cups shredded cheddar cheese
Preheat oven to 350°
Cut tops off of the peppers and cut pepper in half from the top. Clean out seeds and inside.
Stuff peppers with beef mixture leaving a little room on the sides of peppers. Place in a round cake pan or on a baking sheet. Bake 1 hour, covered.
Remove from oven and add sauce to top of peppers making sure to get sauce inside peppers where you left room when stuffing them in the beginning. Top with cheese.
Bake uncovered 20 more minutes or until cheese is melted and bubbly.
