Veggie Ranch CheeseballThis is the best cheeseball that I've made! I first made it at work for one of my weekly special wraps and since then I've made it at home 3 times! One time was for my olive, pepper, hating hubby's Christmas work party and he requested that I make it! He never had a clue about black olives being in it but he knew about the peppers and said he liked them in this cheeseball! Needless to say, this is one delicious cheeseball and it's veggie! 2 (8 ounces each) pack cream cheese, softened ΒΌ cup dry Ranch seasoning mix 1/3 cup black olives, diced as fine as you can get them 1/3 cup roasted red bell peppers from a can with the juice using 3 Tablespoons of that juice, diced as fine as you can get them 3 individual stalks green onions, diced as fine as you can get them With a mixer, mix cream cheese, seasoning mix, olives and peppers with the 3 Tablespoons of juice until smooth. Fold in green onions. Refrigerate until firm and it can be rolled into a ball or a semi ball. Serve with crackers.
