Italian Chicken, Green Beans & PotatoesGrowing up as a kid I remember snapping green beans with my mom and aunt and green beans bought at my local Kroger's now are more like French/thin green beans and my hubby does not like them! After they baked for an hour I tried boiling them but nope the green beans weren't the same as we remember as kids! Can you even buy green beans at stores like the "old days"? Needless to say that I would do this recipe totally different if I made again and I probably won't make it again! The chicken was over done and the potatoes weren't done! If I made it again I would bake the potatoes separate from the chicken and not use foil! And find the green beans that we like, maybe Green Giant out of a can! We really wanted to like this meal and it is a great ideal! One pan and easy to prepare! Recipe from Grace And Good Eats2 cups green beans 1 (24 ounce) bag small new potatoes 2-3 large boneless skinless chicken breasts, butterfly cut thru to make 4 or 6 to make thinner 1 package dry Italian salad dressing mix 1 stick of butter Salt and pepper, to taste Preheat oven to 350° Line one side of a 9x13 baking dish with green beans and line the other with the chunks of potato. Place the chicken breast between the green beans and potatoes. Cut the butter into 1 tablespoons squares and place evenly over the green beans, chicken, and potatoes. Sprinkle entire dish with Italian seasoning, salt, and pepper. Cover with foil and bake for one hour. Chicken was over done and potatoes weren't done cooking this way in my opinion.
