Chipotle Chicken PaniniWe make this sandwich at work and I love it! Every time it comes around on the menu, I know what I'm having for lunch! I also make it at home every now and then because it's not hubby's favorite! The dressing and pepper jack cheese are a match made in heaven! Brioche buns are so good! I love using my Panini Press and I don't use it as often as I would like to! I just love the crispiness of the bread! You can use store bought Southwest Chipotle Ranch Dressing and Hidden Valley is the brand I get or you can make your own which we do at work! I put the instructions for that below! 2 boneless skinless chicken breast, grilled Lawry's Seasoned Salt, to taste 4 Brioche buns 4 slices Pepper Jack cheese 1 medium red onion, sliced into rings Southwest Chipotle Ranch dressing, bottle or make your own (recipe below) Heat Panini Press. Cut chicken in half to make 4 bun size pieces. Season with seasoned salt. Grill in skillet or on grill 5-7 minutes per side or until internal temp reaches 175° Remove from skillet and place on buns. Add cheese, onion and dressing. Place on Panini Press and grill until bun is a little crispy. To Make Chipotle Ranch Dressing or just use bottled from Hidden Valley 1 cup Ranch Dressing 1 teaspoon refrigerated Chipotle flavor concentrate, Minor is the brand we use at work, Google to see image Mix together until smooth.
