Pineapple Cream Cheese SpreadI made this at work and it is delicious! So creamy and tastes like pineapple cheesecake filling! That was my intention to make it taste somewhat like cheesecake! Boss asked me to make cream cheese with pineapple in it and I went a little further and beyond! Boss loved it and so did all of my customers! It was made for a ham and swiss sandwich made on a pretzel bun, a special that I was having for the week! I also found that it is great on a bagel! Makes for a great breakfast or anytime! 2 (8 ounces each package) cream cheese, softened 1 (8 ounce) can Pineapple Tidbits, save 2 Tablespoons juice and drain the rest 1/3 cup sugar 1 Tablespoon vanilla extract 2 Tablespoons pineapple juice from the can To make 1 sandwich use 3 slices deli ham, cheese of choice and 1 pretzel bun and add the spread. Toppings of choice can be added as well. In a large bowl, using a mixer, mix all ingredients until creamy. Refrigerate 1 hour or until serving.
