Creamy Chicken OrzoWe love Orzo! It's a tiny pasta that looks like rice but taste like pasta! 1 cup is plenty for this recipe! It's great used in many different recipes! It's ready in a jif and you only use one skillet or pot! I like using my big, roomy skillet! Awesome dinner! Nice and creamy! Yum! Recipe adapted from New South Charm2 Tablespoons Extra Virgin Olive Oil 1½ pounds boneless skinless chicken breast, cut into bite size pieces salt and pepper to taste 1 small onion, diced 1 Tablespoon minced garlic 1/2 teaspoon oregano 1/2 teaspoon basil 1 teaspoon dry Italian Salad Dressing seasoning 1 (10¾ ounce) can cream of chicken soup 1 (14.5 ounce) can diced tomatoes 2 cups chicken broth 1 cup of orzo pasta 1 cup grated Parmesan cheese Warm olive oil in a large skillet. Season diced chicken with salt and pepper. Place in skillet and cook until juices run clear, about 10 minutes. Add onion and sauté until tender. Add minced garlic and sauté another 2 minutes. Add oregano, basil and Italian seasoning. Mix everything well. Add Cream of Chicken Soup, diced tomatoes and chicken broth. Mix well and bring to a boil. Stir in Orzo, reduce heat to low and cook 10 minutes Add cheese until melted, mixing well. Serve
