Cheesy Taco Sloppy Joes
Awesome sandwich! Hubby loves Sloppy Joes of any kind so I'm always on the lookout for different Sloppy Joes! This was different and delicious! One skillet and easy!
We love Brioche buns! The beef was perfectly seasoned and you can control the heat with the amount of jalapeño you put in the mix! We didn't find this spicy at all but if you're sensitive to spicy you can leave the jalapeño out and put in a bell pepper! This was really cheesy and the toppings that I added were perfect especially the sour cream and a little squeeze of fresh lime! Yum!
This would be great as leftovers too! Tacos, Nachos or in some chili!
Recipe adapted from 30 Minutes Meals
1 pound lean ground beef
1 Tablespoon Extra Virgin Olive Oil
1 medium onion, diced
1 Tablespoon minced garlic
1 large jalapeño, diced (add another one for taking picture if desired)
1 Tablespoon taco seasoning
1 (15 ounce) can tomato sauce
salt and fresh ground black pepper, to taste
¼ cup beef broth
1 Tablespoon cornstarch
1½ cups Mexican blend shredded cheese
6 brioche hamburger buns
2 diced tomatoes (optional for a topping)
sour cream (optional for a topping)
chopped cilantro or parsley (optional for a topping)
fresh lime (optional for a topping)
Brown beef. Drain.
To the same skillet heat Olive Oil and add onion, minced garlic and diced jalapeño pepper. Cook for about 4-5 minutes until the veggies start to soften, stirring a few times.
Add beef back to the skillet and mix well with veggies. Add taco seasoning, tomato sauce, salt and pepper and stir to combine.
In a small cup mix beef broth and cornstarch together to make a slurry. Add slurry to the skillet. Stir to combine and cook for another 5 minutes or until the mixture thickens some.
Turn off the heat and mix in the Mexican blend cheese.
Serve on toasted brioche buns topped with diced tomatoes, sour cream, cilantro and a squeeze of fresh lime juice.
