Homestyle Beef Noodle Soup
Mmmmmm, Mmmmmm, Good! Hearty, Beefy, Comfort food! Great beef flavor and the gravy from the roast is what helps give it that great beefy flavor! The microwavable roast is out of this world good! We have it sometimes for dinner with mashed potatoes, a veggie and dinner rolls! Great meal!
We love the Reames Noodles and I don't make them often enough! Where I work, we make our Chicken Noodle soup and Beef Noodle soup with them and this is where I got the idea of the roast and noodles in the soup! Not the same roast as work but I love the way I make it at home! Delicious!
4 cups water
2 Tablespoons Beef Bouillon
½ cup carrots, diced
½ cup celery, diced
4 (14.5 ounce each) beef broth (save ½ cup for later in recipe)
1 cup onion, diced
1 (24 ounce) Reames Noodles (found in the frozen section near garlic bread)
2 (15 ounces each) Hormel Roast (found near hot dogs, ham, etc)
salt & pepper, to taste
2 Tablespoons flour
In 6-8 quart pot bring water and beef bouillon to a boil. Add carrots and celery and boil until tender about 15 minutes or so. Add broth saving ½ cup, onion and noodles and continue boiling 20 minutes, covered, stirring frequently.
Microwave both roasts according to package instructions. When finished shred meat and add meat and gravy to pot. Add salt and pepper. Mix well.
In a small bowl add remaining ½ cup beef broth and flour and mix well to make a slurry. Add to pot, mix well and simmer 15 minutes, uncovered or until thickened to your liking.
Great served with buttered bread.
