Cranberry Cheesecake FluffDelicious! Sweetness from cranberries, sugar and pineapple and creaminess from cream cheese, heavy cream and marshmallows and of course nuttiness from the pecans! All of it mixed together and you have a heavenly dessert! This is a dessert in my eyes and it disappeared fast from our Thanksgiving table! I had a small bowl left over and ate it the next day and it was still good! So easy to make! Recipe from Sweet Spicy Kitchen 2 cup fresh cranberries 1 cup granulated sugar, divided ⅔ cup pecans, chopped 1 cup crushed pineapple, drained 1 (8 ounces) cream cheese, softened 2 cups heavy whipping cream 2 cups mini marshmallows Put cranberries in the food processor or blender and chopped them. Remove to a bowl and add ½ a cup of sugar and mix well. Cover and leave in the fridge overnight. Take out of fridge, add pineapple and pecans and stir. In a large bowl combine cream cheese with remaining ½ cup of sugar and beat until creamy. Add heavy whipping cream and mix until well combined and firm like consistency of icing. Fold in cranberries and mix well. Gently mix in mini marshmallows. Cover and leave in fridge 3-4 hours. Best if served same day but still OK next day.
