Sausage & Peppers Mac & Cheese
One Skillet Meal! Wonderful meal! Italian taste and the house smelled so Italiany! I love using the Cavatappi noodles because the ridges scored in them hold on to the sauce really good! Sauce in every bite! Slightly spicy from the sausage and marinara and you can control the spice with the kind of sausage and marinara you buy! Mild, Hot or Sweet Johnsonville sausage is what they sell in this area! I bought the mild and along with the Barilla Marinara it was slightly spicy and that was perfect for us!
Creamy from the half & half and cheese! Just a wonderful meal all the way around! To top this perfect meal off, I served it with cheesy garlic bread! Love in the tummy!
Recipe adapted from Julia's Album
1 pound pork sausage, Johnsonville is good
1 Tablespoon Extra Virgin Olive Oil
1 red bell pepper, diced
1 green bell pepper, diced
8 ounces cavatappi noodles, dry, (it's elbow or spiral noodles with ridges in them)
18 ounces marinara sauce
18 ounces water
salt & pepper, to taste
1 packet dry Zesty Italian Dressing Seasoning Mix
1/3 cup half and half
1/3 cup mozzarella cheese
In a large skillet brown and crumble sausage on medium heat. Drain.
In the same skillet heat olive oil. Add diced bell peppers and sauté 4-5 minutes. Return sausage to skillet and add dried elbow macaroni, marinara sauce, water, salt & pepper and dry Italian dressing seasoning mix. Bring to boil. Reduce heat to simmer and simmer, covered, about 20 minutes or until macaroni is tender, occasionally stirring.
Add half and half, sprinkle with cheese, and mix everything well.
Remove from heat, cover and let sit about 2 minutes or until cheese melts.
