Kathy's Salmon PattiesWe love Salmon Patties and I don't make them enough! We gobble them down! Delicious! 2 cans (14.75 each) Pink Alaska Salmon 1 small onion, diced thin 1 egg, beaten ½ sleeve crackers, crushed Dash of milk 1/3 cup flour 1 cup breadcrumbs for coating patties (I use panko) Vegetable oil for coating skillet Drain all liquid from cans of salmon. Clean all skin and bones from the salmon and place in a mixing bowl. Bones will be straight down thru the center. Add onion, egg, crackers and mik. Mix with your hands until all ingredients are mixed well into the salmon. On a plate mix flour and breadcrumbs. Shape salmon mixture into round patties and coat both sides with the breadcrumb/flour mixture. Once oil is hot in the skillet, place patties into skillet and brown each side 5 minutes or so until golden brown. Place on paper towels when finished to drain. Makes approx. 9 patties
