Thumbprint Cookies
I love the Christmas holiday season! My mom and Sister In Law and niece always have a baking day thru the holidays and I decided to join them this year! We baked all day since we did several types of cookies and made enough to split between us, which is 4 families! My favorite is the Thumbprint or the No Bake, it's a toss up!
1/4 cup butter or margarine (softened)
1/4 cup shortening
1/4 cup brown sugar (packed)
1 egg (separated)
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
3/4 cup pecans or walnuts, finely chopped
Icing
2 cups powdered sugar
2 Tablespoons plus 1 teaspoon milk (or more if needed)
Food colorings of choice and different flavorings if desired
Preheat oven to 350 degrees
Mix butter, shortening, sugar, egg yolk and vanilla. Work in flour and salt until dough holds together. Shape dough by teaspoon into 1 inch balls.
In a separate bowl beat egg white. Dip balls into egg white and roll in your finely chopped nuts.
Place 1 inch apart on baking sheet and press thumb deeply into center of each.
Bake 10 minutes or until lightly browned. Immediately remove from baking sheet and cool.
Once completely cooled, you are ready to ice. Mix powdered sugar and milk until smooth.
Once icing is smooth, separate spoonfuls into separate small bowls and add food coloring as desired. You can also use flavors such as almond extract in the white, strawberry in the red, lemon in the yellow, vanilla in the blue and whatever you like. Mix well and add small amounts to each cookie as desired.
