Mom's Sweet Potato CasseroleYou know, I don't like sweet potatoes but I love this! That's strange to me! This is a great side dish and not just for the holidays! I can take a few bites of the marshmallow topped sweet potatoes but this recipe is the one for me! 3 cups hot mashed sweet potatoes ½cup sugar ½ teaspoon salt 2 large eggs, lightly beaten ¼ cup margarine, softened ½ teaspoon vanilla ½ cup milk Topping½ cup light brown sugar 1/3 cup flour 1 cup pecans, chopped 2 Tablespoons margarine Preheat oven to 350° Mix potato ingredients and put into sprayed 1½-2 quart casserole dish. Combine topping ingredients and mash together well with a fork or pastry blender. Sprinkle on potatoes and bake 35-45 minutes.
