Creamy Stuffed Peppers
These were very good! Nice and creamy mix stuffed in the sweet peppers! I served these stuffed in the peppers, spread on peppers cut into strips and also spread on Ritz crackers and all ways were delicious!
I think stuffing the peppers is tedious and very time consuming! Just cut into strips and spread mixture right on strips and spread on crackers!
The chipotle peppers in adobo sauce wasn't spicy at all in this dish! I made sure that I got all seeds out and I think that was important!
This would make a great cheese ball! The aroma that you get from the cheesy goodness you would think that you made a cheese ball! Delicious!
Recipe from BETTER HOMES & GARDENS
1 (16 ounce) bag mini sweet peppers (you don't want the really mini but the larger mini and you'll see the difference)
1 (8 ounce) package cream cheese, softened
2 green onions, thinly sliced
3 (from a can) chipotle peppers in adobo sauce, seeds removed from center and then cut into small pieces
salt & pepper, to taste
10 cherry tomatoes
Cut peppers in half lengthwise, not all the way through but just enough to put cream cheese mixture in, like a canoe. Remove seeds and ribs. It's pretty when prepared like this but save your time and just cut peppers in strips and spoon mixture on peppers that way too.
In a medium bowl stir together cream cheese, green onions, chipotle pepper, salt, and pepper. Gently stir in the tomato.
To serve, spoon the cream cheese mixture into the pepper halves.
