Meatball Stuffed PeppersWhen I saw this recipe posted from Sherry I knew I was going to make it! I had just bought some fresh meatballs with mozzarella in the center from our local butcher and didn't have an exact plan for them! I also love bell peppers and had red, green and yellow on hand! There was dinner! I knew the green bell was going to be the star pepper! Green always has a distinct flavor and it made it's way to the meatballs for an awesome combination! Red bell has it's own smooth, mild flavor which is my favorite dipping pepper! It was good with the meatballs! I made some spaghetti noodles and used more sauce for those and had it with the meatballs too! 2 large bell peppers (green flavors meatballs great) 12 meatballs, golf ball size, frozen or homemade 8 ounces spaghetti sauce grated parmesan cheese (from green container) 1 cup shredded mozzarella cheese Cut peppers in half from top to bottom. Remove seeds and white parts. In a medium heat, sprayed skillet, place meatballs and brown. When meatballs are brown add spaghetti sauce to skillet and let simmer with meatballs 5 minutes. Place 3 meatballs in each pepper half. Sprinkle with parmesan cheese and then top with shredded mozzarella cheese. Bake 40-45 minutes.
