Red Cabbage With ApplesThis is another dish that I made at work for Oktoberfest! I don't know what it was about it that made it taste very similar to my Wilted Lettuce Recipe! Bacon taste throughout with the sweetness from the apples and brown sugar were the stars of the show and were an awesome taste for the taste buds! Fall months are when the apples are plentiful and the tastiest in my opinion so I like finding recipes that use apples! This was the perfect recipe! Great side dish! Recipe adapted from allrecipes 3 tablespoons extra virgin olive oil ½ cup soft bacon bit pieces 1 small onion, diced 2 Tablespoons minced garlic 1 head red cabbage, chopped 1/3 cup apple cider vinegar 1/3 cup brown sugar 3 red apples, diced (peel if you like but I didn't) salt and ground black pepper, to taste Heat oil over medium heat in a large skillet. Sauté and stir bacon, onion, and garlic until fragrant, about 5 minutes. Stir cabbage into bacon mixture and toss to coat with oil. Cover skillet, reduce the heat, and cook, stirring occasionally, until cabbage begins to soften, about 10 minutes. Stir cider vinegar and brown sugar together in a bowl. Pour over cabbage mixture. Stir apples into cabbage mixture. Cover and cook, stirring occasionally, until most of the liquid has evaporated and cabbage is tender, about 15-20 minutes. Remove pan from heat and allow cabbage mixture to stand, covered, for about 5 minutes. Season with salt and pepper.
