Turtle Cookies
When my hubby walked in from work he asked, "are these store bought" and I said, "WHAT" He said that he only meant that they looked so perfect! It turned out that these so called store bought cookies were his absolute favorite cookie! He loves caramel and chocolate so I knew these would pull at his heart strings!
Nice and crunchy from the Ritz Cracker with the salt from the cracker too and the caramel and chocolate made for one delicious cookie! Sweet and Salty are so good together like 2 peas in a pod! The pecan chips on top was the perfect topping! I know I'll be making these again!
Recipe adapted from THE GUNNY SACK
1 (11 ounce) bag Caramel Baking Bits
2 Tablespoons heavy whipping cream
2½ sleeves of Ritz Crackers from a 13.7 ounce box (70 crackers)
1 (24 ounce) package chocolate almond bark
½ cup pecan chips
Microwave caramel bits 1 minute. Stir. Add whipping cream and microwave in 15 second intervals, stirring after each 15 seconds. You might do this 3 or 4 times depending on your microwave.
When finished melting caramel, place a small amount, about a teaspoon on the inside of 35 crackers and top with another cracker to make a "sandwich" and press down gently so caramel spreads around to the entire inside of cracker.
Refrigerate 45 minutes.
After cookies have been in fridge 45 minutes remove and melt 4 squares at a time in microwave starting at 1 minute and then stir. Repeat for 15 seconds until completely melted. After the chocolate has begun to melt, chop it up in the bowl that it's in and it will melt faster. Every 4 squares will coat 10-12 cookies so repeat melting process with 4 more squares as needed.
Place on parchment paper or wax paper and sprinkle with pecan chips.
Let sit until hardened, several hours or overnight.
Store in large Ziploc bag or an air tight container.
Makes 35 cookies depending on how much caramel you put in each one.
