Mexican Pizzetta
These little pizzettas were so good! Hubby said, "You can make these again anytime" Hubby doesn't really care for chunky salsa like I do so on his pizzettas I put his favorite taco sauce! So it's a very versatile recipe and easy to make!
I had some corn tostadas to use up from when I made CRUNCHWRAP SUPREMES so I decided to make Mexican Pizzettas and when I Googled the word "pizzetta" to see if it was a word since I just came up with the word the definition said, "is a small pizza that can range in size as a finger food at around three inches in diameter to that of a small personal-sized pizza" YAY it was a word!
The crunch of the tostada with the refried beans, taco meat, salsa and cheese was delicious! One thing I will add next time is diced green onions! I went looking in the fridge to see if I had any and there were none! Boo-Hoo they would have been a perfect topper! I did add sour cream to my plate to dip mine in! Yum!
1 pound ground beef, browned and drained
1 package taco seasoning plus the water the package calls for
2 Tablespoons taco sauce
1 (20 count) package small crunchy corn tostadas, about 5½ inches round, it takes 2 per pizzetta, you will have a few leftover
1 (16 ounce) can refried beans or homemade
2 cups shredded Mexi Cheese, or more to taste
1 cup chunky salsa or taco sauce or mix and match and make some of each
diced green onions for garnish, optional
sour cream, optional
Preheat oven to 400°
In a skillet brown ground beef and drain. Return to skillet and add taco seasoning mix, water that package calls for and 2 Tablespoons taco sauce. Mix well and bring to a boil then reduce heat to simmer for 5 minutes.
Heat beans in microwave 1 minute or so and they will spread better.
Place tostada shells on a cookie sheet. Spread beans on top of each bottom shell. 2 shells will make 1 pizzetta.
Spread a layer of meat on top of beans and then sprinkle a small amount of cheese on top of meat. Place another shell on top of that. Spread salsa or taco sauce on the top side of that shell. Top with cheese.
Bake 8-10 minutes or until heated through and cheese is melted.
Garnish with green onions and sour cream if desired.
