Pizzadilla
Not a Quesadilla but a Pizzadilla!
This was super good! I had some flour tortillas to use up and this was the perfect recipe! I loved the tortillas as a crust but I was so surprised that the tortillas didn't hold their crispiness! It was still super good but I bet if it had held it's crispiness it would of taken this pizza to a new level! It was probably just the sauciness of it!
This was so easy to make and the only trick to it was flipping it! I made it a little different from the video that goes with this recipe! I have a big round pizza baking sheet and I just put that on top of my skillet and flipped it! Perfect flip and a perfect dinner! Will make this again!

To Make 1 (8 piece pizza)
1 Tablespoon Extra Virgin Olive Oil
2 Large Burrito Size flour tortillas
1 cup pizza sauce, divided
3 Tablespoons grated Parmesan cheese, divided, I used from green container
2 cups shredded mozzarella or Italian cheese blend, divided
pepperoni slices, enough to cover both tortillas
oregano for garnish
Heat olive oil in a large skillet. Add 1 tortilla and top with half of the pizza sauce, half of the Parmesan cheese, half of the shredded mozzarella and enough pepperoni slices to cover tortilla. Place the other tortilla on top of that and cook until the bottom side of tortilla is crispy.
When it's time to flip it get a round pizza pan or something big enough to hold the tortilla pizza and place that on top of the skillet and flip it. Once flipped onto the pizza pan, slide it back into the skillet and top with remaining pizza sauce, Parmesan, mozzarella and pepperoni. Sprinkle with oregano. Let cook until bottom tortilla is crispy.
Slide pizza tortilla back onto pizza pan or baking sheet and place in broiler and broil until cheese is melted and lightly golden.
Serve
