Mom's Zucchini CasseroleI love zucchini and this recipe is a great way to use up some zucchini! I also love french fried onions so this recipe was a bonus to me! Thanks Mom! Very easy to make! I've made it with the different crackers named below, at different times, and I can tell you that all of the flavored crackers were awesome in this! 1 (10¾ ounce) can cream of mushroom soup 1 large zucchini, peeled and cut into ½ inch strips 2 cups shredded cheddar cheese 1 large can french fried onions Enough crushed crackers to cover each layer (onion flavored, cheese ritz or garlic parmesan) Put just enough soup to cover the bottom of a 2 quart casserole dish. Layer in order, zucchini, crackers, french fried onions and cheese and then repeat layers. Bake at 350°, covered for 45 minutes. Uncover and bake another 15 minutes.
