Cauliflower Crust Pizza
The new craze, Cauliflower Recipes! I had to get in on the action and I'm glad I did! This recipe totally came to me out of the blue as I was laying down, half asleep, watching The Food Network! I jotted a few things down and that was it! I can't remember which show I was watching! It was either The Kitchen or Valerie's Home Cooking! So this recipe may not be exact to what I was watching but it sure was good!
Don't use foil to line your baking sheet! I had a time getting it off so I say spray a baking sheet or use parchment paper! Another big tip you must remember because they were stressing this point on the show is to make sure to put your sauce on after your mozzarella cheese so the crust stays dry and doesn't get soggy!
Your choice of toppings are endless with this pizza! I only had a few slices of pepperoni or I would of used more toppings! Don't be afraid to get the cauliflower done when baking! That's the magic to this pizza by having cauliflower as a crust that is a little bit crunchy! Delicious!
I've got 2 more cauliflower recipes up my sleeve! One is made on the grill and the other one is roasted! Can't wait!
1 small head cauliflower, chopped (5 to 6 cups)
1 cup grated Parmesan cheese
1 clove garlic, minced
salt, to taste
Freshly ground black pepper, to taste
dried basil, to taste
dried oregano, to taste
1 egg, beaten
1½ cups shredded mozzarella cheese
½ cup pizza sauce, or more to taste, I used about 1 cup
toppings of choice, I used pepperoni
Preheat oven to 475° Place a baking sheet in oven to preheat.
Add the cauliflower to a food processor and pulse until finely ground or use a grater until crumbly. Place in a large bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool. After cool, using paper towels or a cheesecloth, squeeze out all liquid.
In a large bowl, add the cauliflower, Parmesan, garlic, salt, pepper, basil, oregano and egg. Mix until the mixture holds together when pinched.
Spray a baking sheet or parchment paper. Don't use foil. I did and I didn't like it.
Spread the cauliflower mixture into a pizza shape on baking sheet. Bake until the cauliflower crust is lightly golden and darker at the edges, about 20 minutes.
Remove the crust from the oven, sprinkle with the mozzarella and spread the pizza sauce over the top of the cheese as this keeps the crust dry. Add toppings.
Return to oven and bake until bubbly and cheese is melted, about 5 minutes depending on your oven.
