Cheesy Crust Skillet Pizza
What's better than semi burnt cheese? Well that's what the crust of this pizza is, semi burnt cheese! OMGosh, Delicious! No bready crust just cheese! We are totally loving eating low carb recipes! We saw something like this on Diners, Drive Ins and Dives on Food Network and knew right then that we were going to try and make it! I don't recall who made it or the name of it so this is my version of it and it was amazing!
All the taste of a pizza but without the carby crust! You won't miss the crust at all! Saucy, cheesy goodness all on a bed of melted cheese! We made one pepperoni pizza and one plain and they were both delicious but honestly the one without the pepperoni was the best! When I went looking on the internet for recipes like the one I saw on TV, I read that pre-packaged shredded cheese was the best to use because if you shred your own cheese, it is to greasy so I went with the pre-shredded stuff! Perfect!
To make 1 pizza
1-1½ cups shredded mozzarella cheese or enough to make an 8 inch circle
1/3 cup pizza sauce, Chef Boyardee is awesome
½ teaspoon Dry Italian Salad Dressing Seasoning Mix
8-10 small round slices pepperoni, optional
1 Tablespoon grated Parmesan cheese, from green container
oregano, to taste
In a large skillet make an 8 inch circle with the shredded mozzarella cheese, heating the skillet on medium heat. Spoon on the sauce and spread it around with the back of the spoon leaving a little room around the edges.
Sprinkle with Italian seasoning mix, layer pepperoni if using, sprinkle with grated Parmesan cheese and then oregano.
Cook over medium heat 8-10 minutes and then start checking it by slowly working a spatula around the edges. You want the edges and underneath to be golden brown. Continue cooking if it isn't golden brown. Once it is golden brown, turn off the heat and let the pizza sit in the skillet to set up.
Remove and serve.
