Deep Dish Biscuit Pizza
My friend from work, Nancy, shared this recipe with me! She called it "Hamburger Pizza" and every time she grocery shops her hubby tells her to get hamburger and biscuits! Well, I think my hubby is going to start doing the same thing! I got 8 nice pieces out of this and when there were 3 pieces left he asked me who hasn't eaten yet! Needless to say, he had 3 pieces to himself! We loved it and it is super easy to make! A lot easier than making dough!
The veggies or toppings you could use with this recipe are endless! It had a nice crunch to the bottom crust with the tasty pizza sauce inside and cheesy throughout! Perfect deep dish pizza!
My friend, Sue (gavingrma) gave me a great tip if your pepperoni tends to be greasy! Microwave it first before topping pizza! Depending on the size of your pepperoni, 15-30 seconds and then pat with paper towels! Works like a charm!
1 pound ground beef, browned and drained
½ cup pepperoni, sliced into bite size pieces plus more whole pieces for topping (I use the big deli slices from Kroger)
2 tablespoons extra virgin olive oil
1 small onion, diced (add as many veggies as you like, peppers, mushrooms, olives, etc)
1 teaspoon minced garlic
3 cups pizza sauce (my favorite is Chef Boyardee)
1 (12 ounce) package Grands Jr. refrigerated biscuits
2 cups shredded mozzarella cheese
½ cup or a little less Parmesan cheese from green container, divided
oregano, to taste
Preheat oven to 350°
Remove biscuits from can and flatten them until thin. Cut each biscuit into 4 pieces. In a single layer cover the bottom of a sprayed 9x13 baking dish. Sprinkle with parmesan cheese and place in oven until biscuits firm up and they aren't real doughy, just before they start to brown.
Brown beef and drain. In the same skillet add olive oil and saute onion and garlic. If using more veggies, add them now to saute. Add sliced pepperoni and cook 2 minutes with the onion and garlic. Add pizza sauce and ¼ cup parmesan cheese and mix well. Simmer 10 minutes.
After biscuits are removed from the 350° oven, raise the temp to 400°
Pour meat mixture over biscuits and spread evenly. Top with shredded mozzarella, oregano, whole pepperoni slices and remaining parmesan cheese. A tip to make the pepperoni less greasy is to microwave it first, depending on the size, 15-30 seconds and then pat with paper towels.
Bake at 400° for 15 minutes or until cheese is melted.
