Smothered Pork Chops
I want to start off saying that I could drink this gravy! It was fabulous! This gravy would be great on any chicken dish, salmon patties, biscuits, you name it! This was total comfort food at it's finest! We really enjoyed our dinner!
I love finding new recipes for pork chops and this is 5 stars, 2 thumbs up! The creamy gravy made from heavy whipping cream mixed with chicken broth, smothering the perfectly seasoned pork chops with some fresh veggies in the mix made for a dinner fit for a king or queen! I served this with mashed potatoes topped with the fabulous gravy and we couldn't get enough, making sure to get every drop of gravy off of our plates! I really wish that I had made biscuits with dinner or even hot, buttery dinner rolls! The possibilities are endless! Can you tell that we really loved our dinner?

6 thin boneless pork chops
1 cup red bell pepper, medium diced
1 cup onion, medium diced
1 Tablespoon minced garlic
sprinkle paprika to taste
1 teaspoon basil leaves, chopped
sprinkle salt and pepper to taste
extra virgin olive oil
1 cup heavy whipping cream
2 cups chicken broth
3 Tablespoons flour
In a large skillet cover the bottom with olive oil . Season the pork chops with paprika, basil, salt and pepper.
Place the pork chops in the hot skillet and brown on each side until pork chops are done. Remove from the skillet and set aside.
Put the bell pepper and onions in the hot skillet and sauté 5 minutes or so and then add the garlic and stir together until tender. Remove from skillet. Add chicken broth to skillet and bring to a boil, scraping up all the good bits from the skillet.
In a bowl, whisk heavy cream and flour and add to boiling chicken broth. Mix well and bring to a boil and cook until gravy thickens up somewhat.
Add pork chops and veggies back into the skillet and simmer 5-7 minutes.
Serve.
