Roasted Sausage Potatoes Onions & Peppers
Sherry (gratefulservant Taste Of Home) found this recipe on Facebook and it is delicious! We found out that we love, love, love chicken sausage with apple! Johnsonville has come out with a few new flavors of grilling sausages and had samples of them at the grocery store! I tried them all and they were all good! This was our 1st time eating chicken sausage and it won't be our last! As I was buying it, I was thinking hubby isn't going to go for this and boy was I ever surprised! He raved about it and wants to buy more just to put on the grill!
Personally, I could eat this without the potatoes! I picked most of my potatoes out just because I loved the taste of chicken sausage with apple smothered in red bells, onions, olive oil and spices! Potatoes were good and more the merrier for hubby! He's got an idea for this recipe which is, it would make a great hobo dinner on the grill! He's right!
This smelled amazing while baking! Yummy!
1 (12 ounce) package Johnsonville pre-cooked chicken sausage with apple or your smoked sausage of choice
3 large potatoes, washed and diced into small chunks (about 1/2 inch square)
1 medium onion, cut into wedges or large chunks
1 red bell peppers, sliced into strips
1 Tablespoon olive oil
1/2 teaspoon onion powder
1/2 teaspoon granulated garlic
sea salt and fresh ground pepper, to taste
fresh rosemary chopped, optional
Preheat oven to 375°
Combine everything but the sausage in a large mixing bowl.
In a sprayed 9x13 baking dish add potato mixture and bake 15 minutes.
Slice sausage into coins and add it to pan, stirring into potato mixture.
Bake an additional 20 minutes or until potatoes are tender and veggies are starting to crisp.
Serve immediately.
