Shrimp & Veggie Stir FryI have only been making this a few months (2008) and it is delicious! I had to come up with some creative recipes when learning I had diabetes. This is one of them and it is so easy to make and will be done in no time! 15 pieces medium size shrimp, cleaned and no tails 1 large zucchini, peeled and cut into chunks 1 small onion, cut into chunks 1 cup bean sprouts 2 Tablespoons extra virgin olive oil 3 Tablespoons minced garlic (I use the minced garlic in the jar) Garlic salt & cracked black pepper to taste dash of lemon juice Heat olive oil in pan and add garlic, Saute 2 minutes over medium heat. Add veggies, garlic salt and cracked black pepper and saute another 5-6 minutes, turning up the heat the last 4 minutes. Add shrimp and lemon juice and saute 3-4 minutes.
