Red White & Blue Cheesecake CupcakesI wanted the perfect dessert for the 4th Of July party we were at in Daytona Beach on vacation! I used my famous Cherry Cheesecake Cupcake recipe but added in something blue......Blueberries and it made the perfect Red White and Blue theme! I thought that blueberry would be the least liked so I only made 8 of them blueberry and low and behold they were all eaten quick! One of the Grandma's of a little 6 year old boy told me that he loved the blueberry cheesecake and she had to keep him out of them or he would eat them all! This cheesecake recipe is so easy to make! 5 minutes tops! Delicious just by themselves or straight out of the bowl! 2 (8 ounce) cream cheese, softened 2 eggs 1/2 cup sugar 2 teaspoons vanilla extract 1 (10 ounce) can Pie Filling Cherries, you won't use all of this 1 (10 ounce) can Pie Filling Blueberries, you won't use all of this Vanilla Wafer cookies Mix together cream cheese, eggs, sugar and vanilla until smooth. Put one cookie in each paper cupcake liner. Fill 3/4 full with mixture. Bake at 375° for 12-15 minutes. Refrigerate overnight and add fruit about 30 minutes before serving and refrigerate.
