Hearty Sausage & Potato Soup
Yum! What a hearty, filling soup! This is probably the last soup I make for the season since spring is right around the corner! If you've ever eaten at Bob Evan's restaurant then you've had their home fry potatoes probably loaded with gravy! This soup reminded me so much of them only the gravy was soup form in this dish! Hubby said it reminded him of biscuits and gravy! This soup was so creamy and smooth with little chunks of sausage throughout which made for a wonderful flavor! We really enjoyed this and our tummies were full!

1 pound roll breakfast sausage, cooked, crumbled and drained
3 cups small Yukon Gold potatoes, cut into cubed bite size pieced
¼ cup butter
½ cup onion, diced
¼ cup all purpose flour
4 cups chicken broth
3 cups half & half cream
salt and pepper to taste
3 Tablespoons parmesan cheese from green container
In a large pot, cook sausage and crumble. Drain.
Melt butter in the same pot as you cooked the sausage. Add onions and saute until tender. Stir in flour cooking 1 minute, stirring constantly.
Gradually stir in chicken broth and bring to a boil, stirring frequently until thickened and smooth.
Stir in cream, sausage, potatoes, salt & pepper. Bring to a boil, reduce heat and simmer covered for 15 minutes. Uncover and cook 10-15 minutes more or until potatoes are tender.
Stir in Parmesan cheese, mixing well. Let simmer 5 more minutes.
Let soup rest 10 minutes before serving.
