Chorizo & White Bean With Tomato Stew
Rachael Ray's famous word comes in to play for this recipe, "Stoup" a cross between a stew and a soup and that's exactly what this recipe is!
This was amazing and the house smelled amazing too! Hubby couldn't get enough! He stuffed his tummy! He had a great idea! Make some white minute rice to add to the bowl and it was the perfect addition!
I've been wanting to try Chorizo for a long time and this was the recipe I knew it would work great in! I was right and we found out we love Chorizo! It was mildly spicy but with the other ingredients it worked perfect! We also love white beans so this recipe was right up our alley! The broth was so tasty! The chicken broth with the spices, juice from the tomatoes and drippings from the browning Chorizo and olive oil were delicious! Hubby even made himself a bowl of rice and broth! He was in heaven! Needless to say, we loved this!

1 tablespoon Extra Virgin Olive Oil
1 (13½ ounce) package Chorizo Sausage Links (Johnsonville 2 in a pack)
1 small onion, diced
1 teaspoon minced garlic
1 teaspoon oregano
cracked black pepper, to taste
1 (14½ ounce) can chicken broth
1 (14½ ounce) can diced tomatoes with liquid
2 (15½ ounce) cans Cannellini Beans
½ tablespoon freeze dried basil
1 tablespoon Balsamic Vinegar
cooked white minute rice, optional for adding to bowl
Slice Chorizo into coins and then half moons. Dice onion.
In a pot, heat olive oil. Brown Chorizo. I browned it in 2 batches. Remove from pot leaving liquid in the pot.
If needed add a little more olive oil and saute onions a few minutes and then add garlic to saute 2 more minutes.
Add oregano, pepper, chicken broth, tomatoes and beans to pot and mix well. Return Chorizo to pot, mixing well.
Bring to a boil and then turn heat to a simmer and simmer 30 minutes, stirring occasionally.
Add basil and Balsamic Vinegar and continue simmering another 20-30 minutes, stirring occasionally.
Let sit to thicken up, until a film forms on the top.
Stir and serve. Add some cooked white rice to bowl if desired.
