Salsa Black Bean Burger
YAY! I finally got my hubby to try a Black Bean Burger! He liked it! I love them and eat them as often as I can but this was my first time making them! We serve a Salsa Black Bean Burger at work and they are delicious! They are served on a bun at work but I wanted to cut out the carby bun so I went with lettuce and it was fantastic! I must tell you that the sour cream and salsa as a topping is what takes this burger to the top! So if you like sour cream and salsa you must top your burger with these toppings! The more the merrier!
I love black beans and they are good for you so having a burger made of black beans is perfect! All of these ingredients worked well together! The zip from the jalapeno and salsa made this burger shine!
Good Eats!
1 can (15 ounces) black beans, rinsed and drained
2/3 cup Panko crispy bread crumbs
2 Tablespoons chunky salsa plus more for topping
1 jalapeno pepper, seeded and small diced
3 slices onion, small diced
1 egg
1 teaspoon minced garlic
salt & cracked black pepper, to taste
lettuce leaf to lay the burger on
sour cream for topping
chunky salsa for topping
Mexican Style Cheese, shredded
Rinse and drain beans. On a plate, smash them with a fork.
Prepare jalapeno and onions.
In a large bowl, mix together smashed beans, bread crumbs, 2 tablespoons salsa, jalapeno, onions, egg, garlic, salt and pepper.
I used my burger press to make the burgers or you can form patties with your hands. A burger press works great and the burgers are in uniform shape.
Spray a non-stick pan and cook burgers on medium to medium high heat, 6 minutes per side or until golden brown.
To serve, lay a piece of lettuce on plate, lay burger on lettuce and top with sour cream and salsa. Top with shredded Mexican Style cheese.
