Grilled Italian Chicken & Potato Hobo Dinner
My family and I were a little skeptical when I first told them about potatoes being surrounded with spaghetti sauce! It was definitely food for thought! OMGoodness, Delicious! We love Chicken Parmesan especially grilled and adding potatoes was a bonus!
Growing up, my family had a summer camp and mom was always throwing Hobo Dinners on the campfire whether they were cornish hens, baked beans with hot dogs or whatever it may have been, I just knew when I saw the foil packets on the fire, we were having a great dinner! I've always known foil packet meals as Hobo Dinners! Mom and Dad told us the story of an old guy who lived on empty train cars and he was called a hobo! A hobo merely traveled from town to town, finding work when he could, but only for the sake of financing his next adventure. They had no plates or dishes to cook with so they wrapped their food up in foil, so, the Hobo Dinner was born!
Mighty good eating in my book! This is the 4th different Hobo Dinner that we have made and they are all delicious! Wrap it up, throw it on the grill and dinner is ready in no time! Mmmmm Mmmmm Good!

2 boneless skinless chicken breasts, butterfly cut to make 4
8 ounces Zesty Italian Salad dressing
2 Tablespoons Dry Italian Salad Dressing Seasoning Mix
5 medium red potatoes, sliced (You need 25-30 slices)
1 cup spaghetti sauce, or more to taste
2 cups shredded Italian Cheese Blend
oregano, to taste
Butterfly cut thru chicken. Place chicken in a large Ziploc bag with Italian Dressing and marinate 2 hours or more.
Remove chicken from bag and sprinkle dry Italian seasoning mix on both sides. Let sit 30 minutes.
Slice potatoes into ΒΌ inch circles and spray with butter and salt & pepper to taste on both sides. (I use spray butter is why I say this. I'm sure any way you want to butter them would be great)
Grill chicken on high heat 4 minutes to get some color and grill marks. Remove from grill.
Spray 4 large sheets of heavy duty foil. Place 6-7 sliced potatoes in a circle on each of the 4 large sheets of foil leaving room on the edges. Add chicken to the center of the circle of potatoes and top chicken with spaghetti sauce and cheese. Sprinkle with oregano.
Fold foil leaving room on the top. You don't want it smashing the cheesy chicken.
Place foil packets on grill and grill on medium/high heat 30 minutes with the grill lid closed. Check at 30 minutes to see if the chicken and potatoes are done.
Release the steam from packets gently when opening.
