Chili Lime Chicken & Veggies
Amazing! We had a guest chef at work for the day and he made this! It was out of this world good and we sold out of it! I had to make it at home and boy was it delicious! The Chili Lime Vinaigrette is soooooo good and simple! It is drinkable straight from the blender! This was my first time ever making something with chipotle peppers in adobo sauce and it won't be my last! I was always afraid it would be to spicy but I was wrong! Scraping the seeds from the middle of the pepper was key! Perfect!
The Chili Lime Vinaigrette would be awesome on a garden salad and that's how I'm going to eat my next salad! It was super on the chicken! I can't say enough about it! You will want to pour it on instead of drizzle! I'm going to double the vinaigrette next time and there will be a next time and many more! I have fallen in love with chipotle peppers in adobo sauce! Yum!
4 thin to medium boneless skinless chicken breast, thawed
fajita seasoning mix, to taste
1 small red onion, cut into chunks
1 medium zucchini, cut into chunks
1 small red bell pepper, cut into chunks
1 small green bell pepper, cut into chunks
10-12 cherry tomatoes, whole
1 (12 ounce) frozen corn, thawed
2 tablespoons extra virgin olive oil, more if needed for cooking veggies
salt & pepper, to taste
1 (14.5 ounce) vegetable broth
1 cup barley, cooked & drained
Chipotle Lime Vinaigrette
1/4 cup extra virgin olive oil
2 tablespoons lime juice
1 tablespoons red wine vinegar
1 tablespoons honey
1 tablespoon minced garlic
1 teaspoon cumin
1 small chipotle pepper in adobo sauce, seeds removed
salt, to taste
Season chicken with fajita mix. Sit in refrigerator 1 hour.
Heat grill to medium high and grill chicken until inside temp reaches 175° about 6-8 minutes per side depending on your grill.
Chop onion, zucchini and bell peppers into bite size chunks. In a skillet heat olive oil and add all veggies including tomatoes and corn. Salt & pepper to taste. Saute until veggies are tender.
In the meantime, in a pot, bring vegetable broth to a boil. Add barley and cook according to box instructions. Drain.
For the Chipotle Lime Vinaigrette, add all ingredients to a blender and blend until smooth.
To serve place barley on plate, top with veggies, chicken and drizzle with vinaigrette. Drizzle on veggies too!
